Pumpkin Pancakes

Pumpkin Spice everything is popular this time of year. It seems a little bit sacrilegious to the season to admit, but I am not as big a fan of cloves and ginger as the rest of the world, especially in my cup. But actual pumpkin in baked goods is something to which I can raise a glass.

Sunday brunch is a favorite in our house. In and of itself it is fancy to us, but I still like to serve things to make the meal special. After devouring a good portion of a friend's pumpkin bread over coffee the day before, I was inspired to add a little orange to this Sunday's plate and the result was a big success! These Pumpkin Pancakes will be making it to the table year round.


Pumpkin Pancakes
adapted from Martha Stewart

1 1/4 cups flour
2 tablespoons sugar
2 teaspoons baking powder (or if you're like me and are constantly out of baking powder, you can substitute 1 teaspoon baking soda and 2 teaspoons of lemon juice)
1/2 teaspoon cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon nutmeg
Optional: 1 scoop Arbonne Daily Protein Boost or Vanilla Protein Shake Mix (for some extra protein)
1 egg
1 cup pumpkin puree
2 tablespoons butter, melted
1 cup milk (if you opt for Almond Milk you may want to try a little less than a cup and add more after you combine ingredients if the consistency seems too thick)

Heat a non-stick skillet or griddle to desired temperature. We use a pancake maker set on 3.5 and it is wonderful. No flipping!

Combine dry and wet ingredients into separate bowls and whisk to blend.

Pour wet ingredients into dry ingredients and whisk to remove most of the clumps.

Once the skillet or griddle is prepared, scoop about 1/6 of a cup onto the griddle to cook.

As bubbles begin to form on the top side of the pancakes, flip to finish cooking on the other side.

Keep pancakes warm on a plate in the oven on a low or warm setting while the remaining pancakes cook.

Serve with syrup and butter.

We are just getting our heads above the waters of Fall bugs. It's been infections, migraines, colds, and teething for the past couple weeks. Not real fun, but still moments of simple joys. Not much beats a hot cup of tea between your hands. Am I right?

September Goals Recap:
- Begin Arbonne 30 Day Healthy Living Challenge
- Daily Reading
I did not get to this every day, but I saw great improvement in this as the month progressed. The real purpose of this goal was spending daily time on continuing to learn and grow myself. Once my audio book arrived my rate of spending some time on my self development goal increased to daily. Oddly enough, the more I felt I was accomplishing this goal through the audio book the more I yearned or could squeeze in time for the old fashioned paper version. Isn't there an old adage about the more you learn the more you have to learn? That's what I feel in my life!
- Daily Business Hours
So not a set hour every day which was my intention, but not my season of life right now, but I did work on my business every day.
- Daily  Prayer Time
Again not a set time, but daily.


October Goals:

- Daily self development: reading or listening to an audio book
- 15 minutes on each area of my business daily
- Grocery shop and prep meals on the weekend
- Date night (Got to celebrate 5 years since our first date! Hence the romantic/cheesy October goal pic)

October Currently...





Cheers-ing...
The amazing women in my life! It has been such a blessing to be able to surround myself with women of all different ages and states of life and soak up all the wisdom and goodness they have to offer. These Tuesday Talk ladies are some of them (seriously, they are some of the sweetest)! And I'm so excited to introduce you to our newest addition, Crystal! Organizing...
my to-do list. It has gotten a little out of hand. My goal this week is to make one huge "wish list" of things I'd like to accomplish this season (or let's face it, wished were already done) and pull out the most important for the month, week, etc. For example, the gallery wall slowly gathering in our office is something I wish were already done, but for the moment it's towards the bottom of the list of priorities. But I cannot wait to see this beauty hanging up!

Dreaming...
of dreams! Corny I know, but ever since this post, I have been making an effort to dream a little more and use that as fuel to check off that to do list!

Buying...
Christmas Gifts. I love to shop for the gifts all year long (Got to spread out that spending!), but I tend to get increasingly more focused on it throughout the Fall and early Winter. Last year I was horribly unprepared. This year, I'm proud to say, I have a gift or an idea for one for most of our list. And I'm sad to say, my husband is proving to be the most difficult. Gift giving is most definitely my love language and I want his gift to reflect his importance. Thank goodness we still have a few months left!

This fun item will be under the tree for some ladies for sure.


Listening...
to The 15 Invaluable Laws of Growth by John Maxwell. It is AMAZING! My Arbonne team is reading this for our book club, and someone suggested getting the audio version as well. I am so glad I did. It has helped so much in being able to process and dig deep by having double exposure to the content. I'm only a third of the way through, but I already feel like I can give it a glowing recommendation. If you're wanting to grow in any area of life and are not sure how to begin, I think this would be a great way to start.
