Mock Oatmeal

Holiday season is on us in full force. I love food, especially during the holidays when even the broccoli side has meaning, because grandma would always serve it with Christmas dinner. But let's be real; with all the opportunities to indulge it is too easy to get sidetracked and have the seasonal recipes attack our waistlines.

Every diet plan I have read emphasizes the importance of breakfast. I have found this to be true; my whole day seems off when I skip breakfast. I also notice a difference between starting the day off with protein versus sugary carbs. So to be proactive while surrounded by Holiday Goodies, I am making the extra effort to ensure a good start to my day and rotating between a protein shake, eggs, or this Mock Oatmeal.




2 Tbs. Chia Seeds
2 Tbs. Flaxseed
3 Tbs. Unsweetened Coconut
2/3 cup of hot water (boiled)
4 Tbs. Almond Milk
1 tsp. Vanilla Extract
Dash of Cinnamon

Mix the chia, flax and coconut in a bowl.
Pour the water, almond milk, and vanilla into the dry ingredients. Cover and let sit for a few minutes Add cinnamon and toppings of choice. Stevia can be used to sweeten, I prefer berries.

"Base-ic" Chicken Soup

It's that time of year full of happiness, cheer, sniffles and snuffles...or in our case, the plague. I pray you and your family do not get the stomach bug going around. Not going to lie, I cried myself to sleep wishing my mommy would come take care of us, only to wake to the horrible realization: I am the mommy! So like any good mom, as soon as I could stand, I made a comforting pot of chicken soup. I felt very much like supermom, complete with a secret weapon: my mommy on speed dial.


3 lbs skinless and boneless chicken breast
1 Tbsp coconut oil
1 medium onion chopped
2 large garlic cloves minced
1 cup carrots chopped
1 cup celery chopped
2 cups frozen peas and/or mixed veggies
4 cups low sodium chicken broth
1 tsp Italian seasoning
Pepper to taste

In a large pot or Dutch oven brown the onions and garlic in coconut oil. 

Add vegetables, seasonings, broth, and chicken. Bring to a boil. 

Turn down to low and simmer covered for 30-40 minutes.

At this point the chicken should be cooked through and you have the choice to cut it into chunks or shred it. If my chicken isn't quite done I will cut it into chunks and cook it until it is cooked all the way through.


This soup is a great base. You can add noodles, rice, quinoa, etc. in a pinch. I like to serve it with biscuits and then combine the leftovers with another grain for another day. Leftover ravioli was last week's addition. Yum!

With Grit & Grace: December & An Announcement

 It wasn't long into November that I realized my goal for the month should have been to simply get through it and that we did! December I have much more reasonable goals for myself all focused on simply enjoying this season of our lives. It is my favorite time of year, might as well relish in it!

November Goals Recap:

- Daily business hours
- Daily reading or audio book
- Daily prayer time 
- Organize office space
- Family pictures
- Order Christmas cards
- Finish Christmas shopping

December Goals:
 
- Decorate our home
- Wrap gifts
- Bake Christmas cookies
- Reflect on 2016 and thank God for our Blessings
- Make memories 

And now the news! We are moving With Grit & Grace to the LAST Wednesday of the month. I am thrilled for this move! This way it feels more natural to reflect on how things have gone and prep for the next month ahead! So the next With Grit & Grace will be on January 25th! Hope to see you there!

December Currently...

Happy December! I love this time of year, don't you? It is so full of family and fun, so I'm just popping in to share what we've been up to!

Doing...
 my best to stay away from holiday stress! I love this time of year, but all the expectations can just add anxiety to a joyous season. This year I am being intentional and embracing the fact that our holiday traditions are going to grow just like our family. So our "family tradition" may just be to decorate the house together and not visiting a seasonal display, but I know from my own family I remember decorating the tree more than I do the Nutcracker.

Enjoying...
 watching our son army crawl! I do not think it will get old watching him try with all his might to crawl properly and then realizing that creativity pays off!

Cooking...
 soup, stew, chili...liquid gold during the cold weather!

Wrapping...
wrapping up my Christmas shopping! My husband is the easiest to shop for and paradoxically the hardest. He loves board games. If I get him a board game, he will be over-joyed. If I get him a board game I feel like I barely even tried to please him, because it was just too darn easy! Note- this is much more my problem than his.

Playing...
Christmas music all day! I get warm fuzzies thinking about it!
